Almond Tuiles
modified from Healthy Cooking


10 ounces Almond Paste
7 ounces Powdered Sugar
3.5 ounces Bread Flour
6 ounces Egg Whites
1.5 ounces 2% Low-Fat Milk


1. Combine almond paste, sugar and flour in food processor and process until combined.

2. Add milk and egg whites and process until smooth.

3. Spoon onto silpat positioned on air insulated cookie sheet or a cookie sheet turned upside down. Smooth into thin circles.

4. Bake at 375 for 8 to 12 minutes or until no longer glossy. Cookies should just be set (not runny)and not brown.

5. Remove and place directly on top of mold. Cookie will set within 10 seconds.
