Pear Sorbet
from Healthy Cooking and modified by Chef Ohlin


2 1/4 pounds Pears -- peeled and sliced
9 ounces Water
9 ounces Sugar
6 ounces Pear Nectar
1   Vanilla bean -- split


1. Combine all ingredients in a large saucepan and simmer until pears are tender.

2. Remove the vanilla bean.  Puree in a food processor.

3. Pour mixture into an ice cream maker and churn until thickened.

4. Freeze until solid.
