Cucumber Confetti Salad

  Tomatoes -- cut in 1" pieces
4
  Cucumbers -- cut in 1/4" slices
1
  Red Onion -- cut in 1/4" wedges
1
  Carrot -- coarsely grated
     
Dressing
 
1/2
teaspoon Lime Zest
1
tablespoon Honey
1/2
cup Rice Wine Vinegar
1
tablespoon Vegetable Oil
  Salt & Pepper -- to taste
     


1. Cut vegetables as described and place in large bowl.

2. In a small bowl, combine lime zest, honey and vinegar.

3. Slowly whisk in oil.

4. Adjust seasonings with salt and pepper.
